Ingredients

8 cardamom pods
1 tablespoon cumin seed ( heaping )
2 teaspoons ground cinnamon ( heaping tsp . or 10 cm cinnamon stick )
3 tablespoons light olive oil
1 onion , finely chopped
4 garlic cloves , finely chopped
2 lemons , zested
3 tablespoons pomegranate molasses
3 tablespoons mint , chopped
2 tablespoons water

Instructions

1.Crush the cardamom pods and remove the seeds.
2.Dry roast the cumin seeds in a pan until fragrant, then crush them with a pestle and mortar.
3.Add the cinnamon, cardamom seeds, and cumin to a small bowl and mix well.
4.Heat the olive oil in a frying pan over medium heat and add the chopped onion. Cook until the onion is soft and translucent.
5.Add the chopped garlic and cook for another minute.
6.Add the spice mix to the pan and stir well.
7.Add the lemon zest, pomegranate molasses, chopped mint, and water and mix well.
8.Cook the marinade on low heat for 5 minutes, stirring occasionally.
