Ingredients

1 large eggplant

2 large onions , sliced
2 lbs boneless lamb , cut into 1 inch cubes
3 large tomatoes , peeled and chopped
2 tablespoons fresh lemon juice
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
fresh ground pepper

Instructions

1.Preheat oven to 400F and line a baking sheet with parchment paper.
2.Cut the eggplant into 1 inch cubes and toss with 2 tbsp of olive oil.
3.Spread the eggplant in a single layer on the prepared baking sheet and bake for 15-20 minutes or until tender and lightly browned.
4.Meanwhile, in a large pot, heat 2 tbsp olive oil over medium-high heat.
5.Add in the sliced onions and cook until softened and golden brown, about 10 minutes.
6.Add in the cubed lamb and cook until browned on all sides.
7.Stir in the chopped tomatoes, lemon juice, cinnamon, nutmeg, and pepper.
8.Reduce heat to low and let simmer for 1 hour, stirring occasionally.
9.After 1 hour, add in the roasted eggplant and continue to cook for an additional 30 minutes.
10.Serve the Persian Lamb-Vegetable Khoreshe hot with a side of rice.
