2 leeks
2 bunches flat leaf parsley

2 bunches scallions
dill ( dried or fresh )
1 bunch Baby Spinach or 1/2 bunch regular fresh spinach
2 -3 eggs
olive oil
salt
pepper
cumin
turmeric
ground coriander
coriander seed , if you can find them

Instructions

1.Clean and chop the leeks, parsley, cilantro, scallions and spinach, set aside.
2.In a mixing bowl, whisk together the eggs, salt, pepper, cumin, turmeric, and coriander seed, if you have it.
3.Add in the chopped herbs and mix well.
4.In a frying pan, heat up the olive oil and pour in the egg mixture.
5.Use a spatula to even out the mixture and cook on medium heat for 15-20 minutes, until the edges start to turn golden brown.
6.Place the frying pan under a broiler for 5 minutes to cook the top.
7.Take the pan out and let it cool down.
8.Transfer the omelette kuku to a plate and serve.
