Ingredients

1/2 teaspoon ground cinnamon , rounded
1/2 teaspoon ground cardamom , rounded
1/4 teaspoon ground cumin , rounded
3 cups basmati rice
3/4 teaspoon salt , plus more for soaking ( see instructions )
4 tablespoons vegetable oil , divided
1 medium onion , minced
1 lb lamb shoulder , cut into 2- to 3-inch pieces
fresh ground black pepper
1/4 teaspoon turmeric
1/2 teaspoon ground cinnamon
2 cups water
1 1/2 cups lentils
1 medium onion , sliced
1 cup golden raisins or 1 cup currants
4 ounces pitted dates , chopped
8 tablespoons butter
2 tablespoons yogurt

Instructions

1.Rinse the rice in cold water until the water runs clear.
2.Soak the rice in cold water with enough salt to make it taste like seawater for at least 2 hours.
3.In a large pot, heat up 3 tablespoons of oil over medium heat.
4.Add the minced onion and cook until soft and golden, then remove from the pot and set aside.
5.Heat up the remaining 1 tablespoon of oil in the same pot and add the lamb shoulder pieces, seasoning with salt and pepper.
6.Once the lamb is browned on all sides, add in the turmeric and cinnamon and continue to cook for another minute.

9.Preheat the oven to 375°F.
10.In a large baking dish, combine the soaked rice with the onion, raisins or currants, dates, and 4 tablespoons of butter, mixing well.
11.Spoon the lamb and lentils on top of the rice mixture, and then spoon the remaining 4 tablespoons of butter on top of the lamb and lentils.
12.Pour in enough hot water to cover the rice, and then cook in the oven for 35-40 minutes.
13.Once the rice is cooked and the liquid is absorbed, remove from the oven and let sit for a few minutes before serving.
