Ingredients

1/2 cup kosher salt
1/2 cup brown sugar
2 cans chicken stock
2 cups apple juice
2 cups white wine
1 bay leaf
1 teaspoon dried rosemary leaves
1 teaspoon dried sage
1 teaspoon dried leaf thyme
1 teaspoon dried leaf basil
cold water
12 lbs frozen young turkey , completely thawed , giblets and neck removed ( use neck for gravy )

Instructions

1.In a very large pot, dissolve salt and brown sugar in the chicken stock, apple juice, white wine, bay leaf, rosemary leaves, sage, thyme and basil, and bring to a boil over high heat.
2.Remove from heat and let mixture cool completely.
3.Rinse the turkey inside and out in cold water, and place it in the cooled brine.
4.Add enough cold water to the pot to entirely cover the turkey. Cover and refrigerate for at least 12 hours, up to 24 hours.
5.Preheat oven to 325°F. Remove the turkey from the brine and rinse inside and out with cold water.
6.Pat dry with paper towels and place, breast side up on a rack in a large roasting pan.
7.Roast the turkey, basting with pan juices every 30 minutes, until the thickest part of the thigh registers 165°F, 3 1/2 to 4 hours.
8.Let the turkey rest for at least 30 minutes before carving.
