Ingredients

1 cup all-purpose flour
1/2 cup whole wheat flour ( or use just all purpose white )
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon grated whole nutmeg
1/2 teaspoon ground cinnamon
1/4 teaspoon ground star anise
1/4 teaspoon fresh ground black pepper
1 cup apple butter
1/4 cup sugar
1/4 cup honey
2 large eggs , lightly beaten
1/2 cup golden raisin
2 tablespoons sliced almonds , divided

Peppernut Tea Bread, also known as Pfeffernusse, is a traditional German holiday treat. It is typically enjoyed in small hard cookies, but this recipe takes the warming spices and applies them to a simple tea bread. The combination of apple butter, golden raisins, and spices creates a uniquely delicious and warming flavor that is perfect for the colder months. This lightly sweet bread is perfect for breakfast, snack, or dessert and pairs wonderfully with a warm cup of tea or coffee.

Instructions

1.Preheat oven to 350°F.
2.In a medium bowl, whisk together flours, baking soda, salt, nutmeg, cinnamon, star anise, and black pepper.
3.In a large bowl, mix apple butter, sugar, honey, and eggs until well combined.
4.Stir the dry ingredients into the wet mixture until just combined. Fold in the raisins and 1 tablespoon of the sliced almonds.
5.Spray a 9x5 inch loaf pan with cooking spray. Pour the batter into the prepared pan. Sprinkle remaining sliced almonds on top.
6.Bake bread for 50-55 minutes or until a toothpick inserted into the center comes out clean.
7.Cool in pan for 10 minutes, then remove from pan and cool on a wire rack.
