Instructions

1.Preheat the oven to 350°F (175°C).
2.In a large mixing bowl, beat the butter and sugar together until creamy.
3.Add in the baking powder, salt, eggs, and peppermint extract. Mix until combined.
4.Gradually add in the flour, mixing until a dough is formed. Fold in the chopped peppermint candy until evenly distributed.
5.Divide the dough in half. Add red food coloring to one half until desired color is achieved. Work in the coloring until the dough is uniform in color.
6.Roll each half of the dough into a log shape and place on a baking sheet. Bake for 25-30 minutes or until the edges are golden brown.
7.Let cool on the baking sheet for 10 minutes before cutting into diagonal slices. Reduce the oven temperature to 325°F (160°C).
8.Place the slices back on the baking sheet and bake for an additional 15-20 minutes until the biscotti are crisp and dry.
