Ingredients

1 1/2 lbs steak
1 teaspoon caribbean jerk seasoning
2 tablespoons butter
6 -8 shallots , sliced
2 garlic cloves , crushed
1/2 cup sherry wine
3 tablespoons water
5 tablespoons light cream
salt
fresh ground black pepper
plantain , cooked , to serve
fresh chives , chopped , to garnish
Peppered steak is a common dish that can be found in many households around the world. The use of sherry wine and light cream adds a distinct flavour to the dish, making it stand out from the rest. Instructions

1.Heat a large skillet over medium-high heat. Season the steak on both sides with Caribbean jerk seasoning.
2.Add 1 tablespoon of butter to the skillet and heat until melted. Add the steak and cook for 3-4 minutes on each side or until cooked to your liking. Set aside on a plate.
3.Add the remaining 1 tablespoon of butter to the same skillet over medium heat. Add the sliced shallots and cook, stirring frequently, for 5-6 minutes until softened and lightly caramelized.
4.Add the crushed garlic to the skillet and cook, stirring continuously, for 1 minute.
5.Pour in the sherry wine and water and stir to scrape up any browned bits from the bottom of the skillet.
6.Bring to a simmer and cook until the liquid is reduced by half, stirring occasionally.
7.Reduce the heat to low and stir in the light cream. Season with salt and pepper, to taste.
8.Simmer for 1-2 minutes until the sauce has thickened slightly.
9.Add the steak back to the skillet and spoon some of the sauce over the top.
10.Serve with cooked plantain and sprinkle some fresh chives on top as garnish.
