Ingredients

50 g butter
75 g caster sugar
1 teaspoon cracked black peppercorns
1 can pineapple rings , halved into semi circles
375 g ready rolled shortcrust puff pastry
baily ice cream , to serve
Peppered Pineapple Tart Tatin is a twist on the classic French dessert Tarte Tatin, which is traditionally made with apples. The addition of black pepper adds a lovely warmth to the sweet pineapple filling. This dessert is perfect for a dinner party or special occasion, as it is elegant and delicious. Serve it with a scoop of vanilla ice cream or a dollop of whipped cream to take it to the next level.

Instructions

1.Preheat the oven to 200°C or gas mark 6.
2.Melt the butter in a 20cm oven-proof frying pan over medium heat.
3.Add the caster sugar and black peppercorns and cook until the sugar has dissolved and the mixture has turned golden in colour.
4.Arrange the pineapple rings in the caramel in a decorative pattern, cut-side up.
5.Remove from the heat.
6.Roll the pastry out to a thickness of 5mm and trim to fit the top of the frying pan.
7.Place the pastry over the pineapple and tuck the edges in around the fruit.
8.Bake in the preheated oven for 20-25 minutes, until the pastry is golden brown and puffed up.
9.Remove from the oven and allow to cool for a few minutes.
10.Place a large plate over the top of the frying pan and carefully invert the pan, so that the tart falls onto the plate.

PROS

The combination of sweet pineapple and spicy black peppercorns makes for a unique, flavourful dessert.

It is easy to make and visually stunning.

CONS

The dessert can be quite rich, so it is best enjoyed in moderation.

The puff pastry may not retain its crispiness when stored overnight.
