Ingredients

1 kg mussels
1 cup wine or 1 cup water , for steaming
80 g butter
2 tablespoons canned green peppercorns in brine , drained and chopped coarsely
2 teaspoons lemon rind , finely grated
1/4 cup fresh flat-leaf parsley , finely chopped

Instructions

1.Soak the mussels in cold water for 20 minutes.
2.Scrub the mussels under cold running water, then pull out the beards and discard them. Discard any mussels that do not close when tapped.
3.Heat the wine or water in a large saucepan until simmering.
4.Add the mussels and cover with a tight-fitting lid. Cook for 4-5 minutes, shaking the pan occasionally, until the mussels have opened.
5.Meanwhile, melt the butter in a small saucepan. Add the peppercorns and lemon rind and cook for 1-2 minutes or until fragrant.
6.Remove from the heat and stir in the parsley.
7.Divide the mussels and their cooking liquid between serving bowls and drizzle with the herb butter. Serve immediately.
