Ingredients

2 teaspoons oil

2 onions , sliced
1 cup sliced mushrooms
4 pieces steak fillets
cracked black pepper , for coating
1 tablespoon oil , extra
3 garlic cloves , crushed
140 g tomato paste ( see Notes )
1/2 cup water
2 teaspoons balsamic vinegar
mashed potatoes , for serving

Instructions

1.Heat 2 teaspoons oil and 1 tablespoon of butter in a pan on medium heat. Add 2 sliced onions and cook for 15 minutes until caramelised. Add 1 cup sliced mushrooms and cook for another 5 minutes. Remove vegetables from the pan and set aside.
2.Season the steak fillets with cracked black pepper and heat 1 tablespoon of extra oil in the pan. Cook the steaks for 2-3 minutes on each side for medium-rare or until cooked to your liking.
3.Add 3 crushed garlic cloves to the pan and cook for 30 seconds. Stir in 140g tomato paste, 1/2 cup water, and 2 teaspoons balsamic vinegar. Simmer for 2-3 minutes until the sauce has thickened.
4.Serve the steak and sauce with the caramelised onions and mushrooms, and mashed potatoes on the side.
