2 lbs filet of beef
1 tablespoon olive oil
2 cloves garlic , crushed
1 tablespoon crushed black peppercorns
2 teaspoons crushed coriander seeds
5 ounces butter
3 shallots , chopped
1/2 cup dry white wine
2 tablespoons tarragon vinegar
1 tablespoon fresh tarragon
4 egg yolks
1 tablespoon fresh lemon juice

Instructions

1.Preheat oven to 400°F.
2.Pat the beef fillet dry with paper towels.
3.In a small bowl, mix together the olive oil, crushed garlic, black peppercorns, and coriander seeds.

5.Heat a large ovenproof skillet over high heat.
6.Once hot, add the beef fillet and sear on all sides until browned, approximately 2-3 minutes per side.
7.Transfer the skillet to the oven and roast for 15-20 minutes or until the internal temperature of the beef reaches 125°F for medium-rare.
8.While the beef is roasting, prepare the Béarnaise sauce: In a small saucepan, melt the butter over medium heat.
9.Add the chopped shallots and cook until soft and translucent, approximately 2-3 minutes.
10.Pour in the dry white wine and tarragon vinegar, and cook until the liquid is reduced by half, approximately 5-7 minutes.
11.Remove the saucepan from the heat and let cool for approximately 5 minutes.
12.In a heatproof mixing bowl, whisk together the egg yolks, fresh lemon juice, and fresh tarragon.
13.Place the mixing bowl over a pot of simmering water, making sure the bottom of the bowl does not touch the water.
14.Slowly pour the melted butter mixture into the egg yolk mixture, whisking constantly until the sauce is thick and creamy.
15.Season with salt and pepper to taste.
16.Once the beef is cooked, remove from the oven and let rest for 5-10 minutes.
17.Slice the beef into thick rounds and serve with the Béarnaise sauce.
