Ingredients

2 red peppers
2 yellow peppers
4 roma tomatoes , skinned , deseeded and finely chopped
1 bulb of garlic , peeled and cloves roughly chopped
olive oil , for frying
1 red onion , finely chopped
3 sticks celery , finely chopped
10 ounces risotto rice
6 tablespoons white wine
8 1/2 cups chicken broth
5 1/2 ounces parmesan cheese , freshly grated
16 leaves basil , torn
2 1/2 ounces unsalted butter
Pepper Risotto also known as Risotto Di Pepperoni is a modern Italian take on rice dishes. Risotto is known for its creamy texture and distinct rice flavor. It is a dish that is frequently enjoyed by Italian families with variations depending on the region in which it is being prepared. The Pepper Risotto recipe is straightforward yet provides a magnificent balance of savory flavors that will keep you full and satisfied.

Instructions

1.Preheat the oven to 390°F.
2.Finely chop the red and yellow peppers and place them on a baking tray with the deseeded and skinned chopped tomatoes, sprinkle cloves of garlic and drizzle with olive oil then roast for 20 minutes.
3.In a pan, fry the red onion and chopped celery until they soften and release their aroma.
4.Add the risotto rice along with the wine and allow the wine to evaporate completely.
5.Add about 1/3 of the warm chicken broth into the pan, give it a good stir and let it cook until the broth is almost entirely absorbed. Keep adding the rest of the broth in small amounts and stir until it is completely absorbed by the rice.
6.Once the rice is cooked and creamy, add the roasted vegetables along with the grated parmesan cheese and torn basil leaves. Season the risotto with salt and pepper then put a lid on the pan and let it rest for a few minutes.
7.Add small spoons of unsalted butter and stir gently before servin

Preparing roasted vegetables can take a while which is the most time-consuming part of making Pepper Risotto.

Risotto in general is a bit of an acquired taste and may not be suitable for those who don’t take kindly to the occasional soft and mushy texture of its rice.
