Instructions

1.Preheat oven to 375°F.
2.In a mortar and pestle, grind black peppercorns, fennel seed, dried rosemary and garlic. Spread the mixture over the beef fillet, pressing it into the meat so it adheres.
3.Heat olive oil in a large skillet over medium-high heat. Sear the beef on all sides until a nice crust forms. Transfer to the oven and roast until medium-rare, about 10 minutes.
4.While the beef is roasting, heat olive oil in a separate pan over medium heat. Add red onion and cherry tomatoes. Cook until tender and slightly caramelized, stirring occasionally. Add balsamic vinegar and cook for another 2-3 minutes. Remove from heat.
