300 g rigatoni pasta
1 tablespoon olive oil

150 ml single cream
salt & freshly ground black pepper
1 onion , sliced

3 tablespoons chopped fresh parsley
50 g cheddar cheese , grated
50 g fresh white breadcrumbs

Instructions

1.Preheat the oven to 200°C/180°C fan/gas 6.
2.Bring a large pan of salted water to the boil and cook the rigatoni according to pack instructions, then drain and set aside.
3.Meanwhile, heat the olive oil in a large frying pan and fry the onions and peppers for 10-15 minutes or until softened and browned.
4.In a bowl, mix together the soft cheese, hummus, lemon juice, and single cream, then season with salt and black pepper to taste.
5.Stir the cooked pasta into the frying pan with the onions and peppers.
6.Transfer the pasta mixture to an ovenproof dish.
7.Pour the soft cheese and hummus mixture over the pasta and vegetables, and spread it out to make sure it covers everything.
8.Sprinkle the grated cheddar cheese and breadcrumbs over the top.
9.Bake for 20-25 minutes or until the topping is golden and bubbling, and the pasta is piping hot.
