Ingredients

1 1/2 tablespoons olive oil
1 large yellow onions ( American ) or 1 large brown onion , thinly sliced ( Australians )
6 garlic cloves , crushed
3 large field mushrooms , sliced
2 large red peppers , cored and sliced
1 large yellow pepper , cored and sliced
6 tomatoes , firm , ripe , seeded and chopped
salt , to taste
1 cup white wine
fresh ground pepper , to taste
1 tablespoon fresh basil , chopped
Peperonato is a traditional Italian dish made from peppers, onions, tomatoes, and mushrooms. This stew-like dish is typically served as a main course and is very popular in southern Italy. Instructions

1.Heat olive oil in a large pan over medium heat.
2.Add the sliced onions and sauté for 5 -7 minutes until soft and translucent.

4.Then add the sliced mushrooms and cook for 5-7 minutes until they have released their moisture and are browned nicely.
5.Add sliced peppers and cook for 10-15 minutes until they soften.
6.Add chopped tomatoes and salt to taste, stir together and continue to cook for 5 minutes.
7.Pour in white wine and turn to high heat until the mixture starts to boil. Then reduce heat, and simmer for 15-20 minutes.
8.Once it’s cooked, season with freshly ground black pepper and sprinkle with fresh chopped basil leaves.
