Ingredients

1 lb silver beet , stems cut from the leaves and the stems and leaves chopped separately
1/8 teaspoon hot red pepper flakes ( to taste )
3 large garlic cloves , sliced thin
2 tablespoons olive oil
1/2 cup water
1 cup drained canned tomato , chopped
1/2 lb penne or 1/2 lb other tubular pasta
1/4 cup freshly grated parmesan cheese , plus additional as an accompaniment

Instructions

1.Cook the penne according to the instructions on the package, in a large pot of salted boiling water
2.While pasta is cooking, heat olive oil in a large saucepan over medium-low heat
3.Add garlic and hot pepper flakes and cook until garlic turns golden brown.
4.Turn heat up to medium-high, add silverbeet stems and stir for around 1-2 minutes.
5.Add the chopped silverbeet leaves and water, and cook until leaves are wilted.
6.Add chopped tomatoes and cook, stirring occasionally until thickened.
7.Add salt and pepper to taste and stir in the grated Parmesan cheese.
8.Combine the pasta and sauce, adding a drizzle of olive oil for taste.
9.Serve the Penne with Silverbeet and Garlic with an extra sprinkle of Parmesan cheese on top.
