1 large eggplant , chopped small
1 large sweet red pepper , chopped small
10 1/2 ounces grape tomatoes , left whole
olive oil , to coat
salt and pepper , to taste
1 lb penne pasta
1/3 cup pine nuts

Instructions

1.Preheat oven to 400 degrees Fahrenheit.
2.In a large bowl, toss chopped eggplant, red pepper, grape tomatoes, olive oil, salt and pepper to combine. Spread vegetables out on a baking sheet and roast in oven for 25 minutes.
3.While vegetables are roasting, bring a pot of salted water to boil. Add penne pasta to boiling water and cook for 8-10 minutes or until al dente.
4.Reserve 1/2 cup of pasta water, drain the remaining water, and transfer the cooked penne to a large bowl.
5.Add the roasted vegetables and pine nuts to the cooked pasta and mix until combined. If the pasta seems too dry, add the reserved pasta water to thin out the sauce.
6.Serve immediately and enjoy!
