Instructions

1.Over medium heat, sauté cubed pancetta in olive oil for 8-10 minutes until crispy. Remove with slotted spoon and set aside.

4.Cook penne according to package instructions to al dente.
5.Once pasta is fully cooked, drain and reserve around 1 cup of pasta water.
6.Mix penne, cooked pancetta, and reserved pasta water with the pumpkin sauce in a large saucepan over low heat. Stir in Parmesan cheese and keep stirring until the mixture is well-combined. Serve hot.
