6 tablespoons unsalted butter , cut into 1/2 inch cubes
3 tablespoons fresh sage , chopped
1 tablespoon fresh rosemary , chopped
1 lb penne rigate
1 cup parmesan cheese , finely grated , divided

Instructions

1.In a saucepan, whisk together the beef broth and dry red wine. Bring to a boil, then reduce to a simmer.
2.In a large frying pan over medium-high heat, warm 2 tablespoons of olive oil. Add the mushrooms and cook until golden and crisp. Season with salt and pepper. Transfer the mushrooms to a plate.
3.In the same frying pan, add pancetta and cook until it is golden and crisp. Transfer pancetta onto another plate.
4.In a large pot of boiling salted water, cook the penne according to the package instructions.
5.In the same frying pan, melt the butter. Add sage and rosemary and cook over medium heat until fragrant, about 1 minute.
6.Add the mushroom mixture and pancetta to the pan, and combine.
7.Drain the pasta and toss with the mushroom and pancetta mixture. Stir in half of the grated Parmesan cheese. Serve with more of the grated Parmesan cheese on top.
