Ingredients

1/2 lb Italian turkey sausage
1/2 cup red onion , chopped
1 garlic clove , minced
1 cup mushroom , quartered
1 small red bell pepper , seeded and cut into 1/2 inch strips
1 small yellow bell pepper , seeded and cut into 1/2 inch strips
1 small zucchini , halved lengthwise and sliced
1 can diced tomatoes , with basil , garlic and oregano , undrained
1/4 cup fat free sour cream
4 cups penne , hot and cooked
1/4 teaspoon black pepper

Instructions

1.Cut up the turkey sausage into bite-sized pieces and set aside.
2.In a large pan, heat a teaspoon of olive oil over medium-high heat, add the onion and garlic and sauté for 2 minutes.
3.Add the mushrooms, red and yellow bell peppers and zucchini to the pan and sauté for another 2-3 minutes.

5.Stir in the cooked turkey sausage and simmer for an additional 1-2 minutes.
6.Take the pan off the heat and stir in the fat-free sour cream and black pepper.
7.Serve the penne with turkey sausage and vegetables in bowls with the hearty tomato sauce on top.
