1 lb peeled butternut squash , pieces
1 small onion , quartered
1/4 cup unsalted butter
1 tablespoon finely chopped fresh sage
1 1/2 cups water
3/4 teaspoon salt
1/2 teaspoon black pepper
2 ounces finely grated parmigiano-reggiano cheese , plus additional
1 cup parmigiano-reggiano cheese , for serving
1 lb penne rigate

Instructions

1.Preheat oven to 425 degrees F.
2.Toss the butternut squash pieces and onion with melted butter and fresh sage and place on a rimmed baking sheet.

4.Add the roasted squash and onion to a blender with 1 1/2 cups of water. Blend until smooth.

7.Cook the penne rigate in a large pot of salted boiling water until al dente, approximately 8-10 minutes.
8.Reserve 1/2 cup of pasta water then drain and add the pasta to the sauce.
9.Toss the pasta with the sauce and if needed, use the reserved pasta water to thin out the sauce.
10.Serve the Penne with Butternut Sage Sauce with additional grated Parmigiano-Reggiano cheese on top.
