4 large egg yolks
2 1/2 ounces pecorino cheese , grated ( about 1 cup plus more for serving )
1 1/2 cups peas ( fresh or frozen )
2 tablespoons unsalted butter
1 tablespoon chives , minced

Instructions

2.Return the water to a boil. Add the pasta and cook until al dente. Reserve 1 cup of the pasta cooking water, then drain the pasta.
3.In a large bowl, whisk together the egg yolks, pecorino, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
4.Add the hot pasta, peas, and fava beans to the egg mixture. Toss until the pasta is coated, adding the reserved pasta water as needed to thin the sauce.
5.Stir in the butter and chives. Serve topped with additional pecorino and black pepper, if desired.
