Ingredients

1 lb large shrimp , peeled deveined , tails intact ( appx 20 )
2 tablespoons cornstarch
2 cups vegetable oil ( for frying )
1 large egg
2 large egg whites
1/4 cup cornstarch
1/4 cup all-purpose flour
2 tablespoons water
1 cup chicken stock
1 1/4 teaspoons sugar
1/4 teaspoon salt
1 tablespoon cornstarch
2 large garlic cloves , thinly sliced ( or even 1/4 tsp garlic powder )
2 tablespoons finely chopped gingerroot
1 fresh red chili pepper , seeded & , sliced
2 green onions , thinly sliced ( green & , white parts )
1/3 cup rice wine or 1/3 cup use a light sweet sherry

Instructions

1.In a large bowl, mix the shrimp with cornstarch until all the shrimps are coated.
2.Heat the oil on medium-high heat in a saucepan. Add the shrimp to the oil and fry for 1-2 minutes until they turn golden. Remove the shrimp to a plate.
3.Mix together the egg, egg whites, cornstarch, flour and water in a bowl. Coat the fried shrimp in the egg mixture and set aside.
4.In a separate saucepan, combine the chicken stock, sugar, salt and cornstarch and bring to a boil. Lower the heat and simmer for 1-2 minutes. Remove from heat and set aside.
5.In another saucepan, add the garlic, ginger, chili pepper and green onions and fry for 1-2 minutes on low heat.
6.Add the rice wine or sherry to the saucepan and increase the heat to high. Cook for 1-2 minutes.
7.Add the chicken stock mixture to the saucepan and stir until well combined. Cook on medium heat until the mixture thickens slightly.
8.Pour the sauce over the fried shrimp and serve hot.
