Ingredients

1 whole duck , dressed
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground white pepper
1/8 teaspoon ground cloves
3 tablespoons soy sauce
1 tablespoon honey
1 orange , sliced in rounds
1 tablespoon chopped fresh parsley , for garnish
5 green onions
1/2 cup plum jam
1 1/2 teaspoons sugar
1 1/2 teaspoons distilled white vinegar
1/4 cup finely chopped chutney

Instructions

1.Preheat oven to 375 degrees F (190 degrees C).
2.Mix together the cinnamon, ginger, nutmeg, white pepper, and cloves in a small bowl. Rub the duck inside and out with the spice mixture.
3.In a small saucepan, combine the soy sauce and honey. Heat over low heat until the honey is melted. Stir well and set aside.
4.Place the orange slices and parsley in the cavity of the duck. Close the cavity with skewers or toothpicks.
5.Place the duck on a rack in a roasting pan and roast for 1 hour. Mix together the green onions, plum jam, sugar, vinegar, and chutney in a small saucepan. Heat over low heat until everything is melted and mixed well.
6.After one hour, baste the duck with the honey-soy sauce mixture and continue to roast for an additional 30-40 minutes, basting every 10 minutes with the remaining sauce. Remove from the oven and let stand for 5-10 minutes before carving.
