Ingredients

1 1/2 lbs shell-on large shrimp , deveined
1/4 cup kosher salt
1/4 cup sugar
1 cup water
2 cups ice
lemon slice
lemon , zest of
black peppercorns
crushed garlic ( -OR- I 've used part garlic salt for the salt mixture , no more than a couple tbsp )
crushed red pepper flakes
fresh parsley
1 tablespoon dried coriander
1 can diced tomatoes , drained
1/2 cup prepared chili sauce
4 tablespoons prepared horseradish
1 teaspoon sugar
3 grinds fresh black pepper
1/2 teaspoon kosher salt
hot sauce ( optional )
1 tablespoon olive oil
1 dash Old Bay Seasoning
Peel and eat shrimp is a staple dish in many coastal regions and is often enjoyed as a casual appetizer or meal. The dish is simple yet satisfying, with succulent shrimp that are packed with flavor.

Instructions

1.Rinse peeled shrimp under cold water and pat dry.
2.In a large pot, combine salt, sugar, water, lemon slices, lemon zest, black peppercorns, garlic, crushed red pepper flakes, fresh parsley, and dried coriander.
3.Bring the mixture to a boil, then reduce heat and let simmer for 5 minutes.
4.Remove the pot from heat and add the ice to cool the mixture.
5.Once cooled, add the shrimp to the pot and let them marinate for 30 minutes.
6.While the shrimp are marinating, prepare the cocktail sauce by mixing the diced tomatoes, chili sauce, horseradish, sugar, black pepper, salt, hot sauce (optional), olive oil, and Old Bay Seasoning in a bowl.
7.Drain the shrimp and arrange them on a serving platter with the spicy cocktail sauce for dipping.
