2 tablespoons fresh tarragon , roughly chopped
1/2 teaspoon dried chili pepper flakes
450 ml double cream
2 large eggs , plus
2 egg yolks
100 g freshly grated parmesan cheese

Instructions

1.Preheat your oven to 200C/180C fan/gas 6.
2.In a large bowl, mix flour and salt. Rub in the butter until the mixture resembles breadcrumbs.
3.Mix in tarragon, chili flakes, and parmesan cheese.
4.Add 2 egg yolks and 2 tablespoons of cold water to form a dough.
5.On a floured surface, roll out the dough and line a 20cm fluted tart tin. Prick the base with a fork.
6.Bake the tart base for 10 mins until golden.
7.In a bowl, beat together the eggs and cream until combined.
8.Pour the mixture over the tart base. Add grated Pecorino cheese over the top.
9.Bake in the oven for 25-30 mins until the filling is set and golden on top.
10.Leave the tart to cool in the tin for a few mins, then remove and place onto a wire rack to cool completely.
