Ingredients

24 baby portabella mushrooms , with stems
2 tablespoons olive oil , plus additional for greasing dish ( original recipe called for unsalted butter-use if you wish or use 1/2 butter , 1/2 olive oil )
1 -2 large garlic clove , minced
1 1/2 teaspoons finely chopped fresh oregano ( or 1/2 tsp . dried )
1 cup pecans , finely chopped
2 tablespoons breadcrumbs
1/2 teaspoon salt ( or more to taste )
1/4 teaspoon black pepper
1/3 cup half-and-half
2/3 cup heavy cream
parsley , chopped to garnish

Instructions

1.Preheat oven to 375°F, and lightly oil a baking dish.
2.Remove stems from mushrooms, and wash caps. Pat them dry with a towel.
3.In a small frying pan over medium-high heat, add 2 tbsp of olive oil, minced garlic and oregano until fragrant.
4.Add the chopped pecans and breadcrumbs to the pan and cook for a few minutes until toasted.
5.Season the filling with salt and black pepper.
6.Add half-and-half to the pan and cook for a couple of minutes until thickened.
7.Fill each mushroom cap with the prepared filling and place them in the prepared baking dish.
8.Add heavy cream over each stuffed mushroom.
9.Bake for 20 min or until mushrooms are tender and the stuffing is golden.
10.Sprinkle with parsley and serve warm.
