Instructions

1.Preheat oven to 350°F.
2.In a medium bowl, whisk together flour, baking powder, sugar, and salt.
3.In a large bowl, whisk together 3 eggs, 2 yolks, and vanilla extract.
4.Add flour mixture to the egg mixture and stir until a dough forms.
5.Fold in the pecans, cranberries, and lemon zest.
6.Divide the dough in half and form 2 logs.
7.Place the logs on a parchment-lined baking sheet and bake for 25 minutes.
8.Remove from the oven and allow to cool.
9.Slice logs into thin pieces.
10.Arrange the biscotti on the baking sheet and bake again for 18-20 minutes.
11.Let the biscotti cool completely before serving.
