Instructions

.Begin by preheating your oven to 350°F (175°C) and lining a baking sheet with parchment paper.
.In a medium mixing bowl, whisk together the flour, pecan meal, sugar, baking powder, salt, and cinnamon until well combined.
.Using a separate bowl, cream together the soft butter, whole egg, and egg yolk until smooth and creamy. Add in the water and mix it in until well combined.
.Gradually add the dry ingredients to the wet mixture and mix until fully incorporated. Fold in the caramel-flavored bits or butterscotch chips until evenly distributed throughout the dough.
.Turn the biscotti dough onto your prepared baking sheet and form it into a 12 x 2 inch log. Be sure to space the dough log from the edges of the baking sheet to allow for even baking.
.In a small bowl, beat the remaining egg white until frothy and brush it over the top of the dough log.
.Place the biscotti into the preheated oven and bake for 25 minutes or until the dough is set and golden brown in color.
.Once baked, remove the biscotti from the oven and allow them to cool on the baking sheet for 10-15 minutes before slicing the log into 1 inch thick pieces.
.Return the sliced biscotti to the baking sheet, cut side down, and bake for an additional 10-12 minutes or until crisp and golden. Remove them from the oven, allow them to cool completely, and serve them with your favorite dip or hot beverage.
