Ingredients

2 egg whites , whisked until frothy
250 g Roquefort cheese
1 tablespoon creme fraiche
450 g shortcrust pastry
1 tablespoon finely chopped fresh rosemary leaf
50 g salted butter
2 large pears , peeled , cored and cut into 1/2-inch slices
1 teaspoon cumin seed
extra rosemary ( to garnish )
2 egg yolks , beaten with 1 tablespoon of milk
salt
fresh ground pepper
danish blue cheese ( optional ) or bleu d'auvergne cheese ( optional )

Instructions

1.Preheat the oven to 200°C.
2.In a bowl, combine the Roquefort cheese, creme fraiche and a pinch of fresh ground pepper. Set aside.
3.Cut the shortcrust pastry into 4 even pieces and roll out each pastry on a lightly floured board. Place onto the baking tray.
4.Divide the cheese mixture into 4 portions, spread over the pastry and sprinkle with the fresh rosemary.
5.In a frying pan over medium-high heat, sauté the cumin seed for 10 seconds in the salted butter. Add pear slices and cook for 2-3 minutes or until golden. Remove from heat and sprinkle with salt. Place the pears over the cheese mixture on the pastry and sprinkle with extra rosemary.
6.Brush the border of each pastry with the egg yolk and milk mixture. Bake for 20-25 minutes or until golden brown. Serve warm or cold with optional Danish blue cheese or bleu d'auvergne cheese on top.
