Ingredients

3 pears , peeled or 6 pear halves in sugar syrup , finely diced
75 g raw cashews , roughly chopped
1/2 cup gluten-free self-raising flour
100 g soft brown sugar
25 g dairy-free margarine
1 tablespoon golden syrup
1 egg , lightly beaten

Instructions

1.Preheat the oven to 180°C/160°C fan-forced.
2.Grease and line a 18cm x 28cm slice tin with baking paper.
3.In a large bowl, mix together the diced pear, chopped cashews, self-raising flour, and brown sugar.
4.Melt the margarine and golden syrup together in a small saucepan over low heat.
5.Add the melted margarine and golden syrup mixture to the dry ingredients and mix well.
6.Add the lightly beaten egg to the mixture and stir to combine.
7.Pour the mixture into the prepared slice tin and bake for 25-30 minutes or until golden brown.
