Instructions

3.Whisk together cornstarch, lemon juice, salt, egg yolks, and remaining 1/3 cup granulated sugar in a small bowl until well combined.
4.Heat peach puree in a small saucepan over medium-high heat until just boiling, stirring constantly. Whisk cornstarch mixture into peach puree and heat, whisking constantly, until thickened, about 1 minute. Remove from heat and whisk in butter.
5.Beat egg whites and cream of tartar together on medium-high speed in the bowl of a stand mixer fitted with the whisk attachment until stiff peaks form.
6.Gently fold peach mixture into egg whites until almost completely combined.
7.Divide mixture evenly among prepared ramekins, filling each to the top and smoothing the tops with a spatula.
8.Bake until soufflés are puffed and browned, about 20 minutes, and sprinkle with powdered sugar. Serve immediately.
