Instructions

1.Sterilize your canning jars and lids by boiling them for 5 minutes in a large pot of water. Let them air dry on a clean towel.
2.Combine the peaches, onion, red bell pepper, jalapeno peppers, cilantro, garlic, cumin, white vinegar, lime zest, 1/4 cup sugar, and light fruit pectin crystals in a large pot. Stir well to combine.
3.Bring the mixture to a rolling boil over high heat, stirring constantly. Add the remaining 3 1/2 cups of sugar all at once, and stir until dissolved.
4.Return the mixture to a rolling boil and cook for 1 minute, stirring constantly. Remove from heat.
5.Skim off any foam or bubbles on the surface of the salsa with a metal spoon.
6.Ladle the hot salsa into the sterilized jars, leaving 1/4 inch of headspace at the top of each jar.
7.Wipe the rims of the jars clean with a damp cloth, and seal each jar with a lid and ring.
8.Process the jars in a boiling water canner for 15 minutes, adjusting for altitude as necessary.
9.Remove the jars from the canner and let them cool on a wire rack for 24 hours. Check the seals on the lids to make sure they are tight before storing.
