Peach Melba Tarts are a variation of the classic Peach Melba dessert, which was created in the early 1900s by French chef Auguste Escoffier to celebrate Australian soprano Nellie Melba. This dessert consists of peaches and raspberry sauce served over vanilla ice cream, and was served to Melba during her stay at the Savoy Hotel in London. These Mini Peach Melba Tarts take the same classic flavors and transform them into bite-sized portions. They are a great summer dessert, light and refreshing with the perfect balance of flavors. The sweetness of the peaches, the tanginess of the raspberries, and the crunchiness of the graham cracker crust are all brought together with a scoop of vanilla ice cream on top.

Instructions

1.Preheat oven to 350°F.
2.Mix jam and water together in a small bowl until smooth.
3.Add red raspberries to the mixture and mash with a fork to combine.
4.Bake the graham cracker crusts for 5-7 minutes, then remove from oven and cool.
5.In a separate bowl, combine diced peaches, almond extract, and toasted almonds.
