Ingredients

1 cup sugar
1 tablespoon light corn syrup
1/2 cup heavy cream

2 cups sweet riesling wine ( not dessert wine )
1/4 cup sugar
1/2 vanilla bean , split lengthwise
4 large ripe peaches , halved pitted
1 pint vanilla ice cream
2 containers fresh raspberries

Instructions

1.Combine 1 cup sugar, light corn syrup, heavy cream, unsalted butter and kosher salt in a medium saucepan.
2.Cook over medium-high heat, stirring occasionally until sugar dissolves, and mixture comes to a boil.
3.Reduce heat to medium-low, and let cook undisturbed for 10 minutes.
4.Add riesling, 1/4 cup sugar and vanilla bean, scraping seeds from pod into mix and bring it to a boil over medium-high heat.
5.Reduce heat to medium-low, add peaches and poach for about 10-15 minutes until tender.
6.Transfer peaches to plate then strain poaching liquid through a sieve into a medium saucepan.
7.Bring poaching liquid to a boil over medium-high heat, then simmer until syrupy.
8.Serve the peaches with vanilla ice cream and raspberries, and drizzle the sauce over the top.
