Ingredients

20 g butter
2 leeks , thoroughly washed and then chopped
3 garlic cloves , roughly chopped
1 teaspoon fresh thyme
3 medium potatoes , peeled and chopped ( medium to large )
5 cups chicken stock
3 cups frozen peas
6 slices prosciutto , halved ( or you may prefer to halve the prosciutto after it has been cooked )
crusty bread , such as ciabatta , to serve
salt , to taste
fresh ground black pepper , to taste

Instructions

1.Melt the butter in a large saucepan over medium heat.

5.Reduce the heat to a simmer and cook until the potatoes are tender, about 20 minutes.
6.Add the frozen peas and cook for an additional 5 minutes.
7.Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend until smooth before returning to the pot.
8.Meanwhile, preheat your oven to 375°F (190°C).
9.Arrange the prosciutto on a baking sheet and bake until crisp, about 10-12 minutes.
10.Serve the soup hot, topped with the crisp prosciutto and crusty bread on the side.
