Ingredients

1 tablespoon olive oil
1 onion , diced
1 celery , sliced
2 medium potatoes , diced
2 carrots , diced
2 garlic cloves , minced
1 teaspoon oregano
1/2 - 1 teaspoon pepper
1 bay leaf
1/2 lb chorizo sausage , sliced browned and grease discarded
1 package dried split peas
salt & pepper
1 -2 chipotle chile in adobo , diced your choice to remove seeds
hot sauce ( optional )

Instructions

1.In a large pot, heat olive oil over medium heat.
2.Add onion, celery, potatoes, carrots and garlic.
3.Stirring occasionally, sauté for about 6-8 minutes until the vegetables have slightly softened.
4.Add oregano, pepper, bay leaf and browned chorizo slices.
5.Add dried peas and 8 cups of water. Stir well and bring to a boil.
6.Reduce heat and simmer for about 90 minutes, stirring occasionally, until the peas have broken down and the soup has thickened.
7.Add chipotle chile and stir well.
8.Remove bay leaf and discard.
9.Use an immersion blender to blend the soup until smooth (or blend in batches in a food processor).
10.Season with salt and hot sauce to taste. Serve hot.
