Ingredients

8 ounces arborio rice
8 ounces peas ( shelled , you can use frozen )
4 ounces button mushrooms ( sliced )
1 onion ( peeled and chopped )
2 garlic cloves ( minced )
low-fat cooking spray
1/2 teaspoon saffron strand ( optional )
1 bay leaf
1 tablespoon parsley ( finely chopped )
black pepper
125 ml white wine
725 ml vegetable stock ( hot )
1 tablespoon parmesan cheese ( or vegan parmesan )
This vegan pea and mushroom risotto is a delicious and hearty dish that is perfect for a cozy night in or for serving to guests at a dinner party. The creamy arborio rice pairs perfectly with the earthy mushrooms and the sweet shelled peas, while the saffron and bay leaf add some extra depth of flavor. This dish is also great for meal prep, as it reheats well and can be easily doubled or halved to fit your needs.

Instructions

1.In a large pot over medium heat, add the low-fat cooking spray and sauté the onion and garlic until the onion is translucent.
2.Add the sliced mushrooms and continue to sauté until they have cooked down, about 5 minutes.
3.Add the arborio rice to the pot and stir it to coat it with the mushroom and onion mixture.
4.Add the white wine to the pot and stir it into the rice mixture.
5.While continuing to stir the rice mixture, add in the hot vegetable stock, 1 ladleful at a time, and stir until the stock has been absorbed before adding the next ladleful.
6.After about 20-25 minutes of stirring and adding the stock, the risotto should be creamy and the rice should be cooked through. Add in the shelled peas, saffron (if using), bay leaf, and black pepper to taste.
7.Remove the bay leaf, stir in the chopped parsley and grated parmesan cheese (or vegan parmesan), and serve immediately.
