Ingredients

7 egg whites
5 g lemon juice
15 g cornflour
300 g caster sugar
300 ml whipped cream
30 g wattleseed extract
120 g cereal or 120 g plain sweet biscuit crumbs
strawberry jam
1 lemon , juice of
1 pinch mixed spice

Instructions

1.Preheat oven to 150°C.
2.Trace a 20cm circle on baking paper and place it on a baking tray.
3.Beat egg whites and lemon juice in a bowl until stiff peaks form.
4.Gradually add caster sugar and continue to beat until the sugar dissolves and the mixture is glossy.
5.Add cornflour, wattleseed extract and mixed spice and mix well.
6.Spoon the mixture inside the circle, making a hollow in the center.
7.Bake for around 1 hour, or until crisp on the outside and soft on the inside.
8.Turn off the oven and allow the pavlova to cool inside the oven.
9.Top with whipped cream, crumbled cereal or plain sweet biscuit crumbs, strawberry jam and lemon juice.
