Ingredients

8 pork escalopes or 8 thin pork steaks
salt

400 g good quality pork sausage
1/2 onion , peeled and very finely diced
1 teaspoon fresh mixed herbs or 1/4 teaspoon dried herbs
1 teaspoon olive oil
4 shallots , peeled and finely diced
2 tablespoons plain flour
2 tablespoons sun-dried tomato paste
750 ml medium sweet white wine
500 g fresh mushrooms , cleaned and thinly sliced
1 teaspoon dried orange peel or 1 teaspoon grated fresh orange zest
bay leaf
parsley
thyme

Paupiettes De Porc, also known as French Stuffed Pork Fillet Parcels, is a traditional French dish that originated in the 19th century. The dish consists of pork fillet stuffed with seasoned sausage meat and baked in a flavorful sauce with mushrooms and shallots. Instructions

1.Preheat oven to 375°F/190°C.
2.Place each escalope on a sheet of waxed paper and using a meat mallet, pound to half its thickness.
3.Combine sausage meat, onion, herbs, salt and pepper with your hands.
4.Divide the mixture into 8 portions and place a portion on each escalope.
5.Roll up the escalope and tie with string.
6.Heat oil in a large flame-proof casserole.
7.Brown the shallots and pork in the casserole on both sides, lift out and set aside on a plate.
8.Add flour and sun-dried tomato paste to the casserole and stir to combine with the cooking juices.
9.Gradually add wine, bring to boil and stir.
10.Return pork and shallots to the casserole.
11.Add mushrooms, orange peel, bay leaf and 1 tbsp of the mixed herbs.
12.Cook in the oven for about 1 hour, basting occasionally.
13.Remove from oven, unwrap and discard the string from each paupiette. Arrange the paupiettes on a platter, and pour over the sauce from the casserole.
14.Serve with green beans and mashed potatoes.
