2 tablespoons butter
1 large onion , chopped
3 garlic cloves , minced
1 lb ground beef

1 1/2 teaspoons kosher salt

2 cans creamy chicken verde soup
1 can chopped green chilies
1 1/2 dozen corn tortillas , divided ( I prefer flour tortillas )
2 cans red enchilada sauce , divided
1 can refried beans
4 cups monterey jack cheese , shredded
black olives , sliced ( optional )
red pepper , curls ( optional )
green pepper , curls ( optional )
yellow pepper , curls ( optional )

Instructions

1.Preheat your oven to 350°F (175°C).

5.In a greased 9x13 inch casserole dish, place 6 tortillas or more (depending on size), overlapping each other. Spread half of the beef mixture on top of the tortillas. Drizzle half of the enchilada sauce over the meat.
6.Spread an even layer of refried beans over the sauce. Cover the beans with a layer of shredded cheese.
7.Add another layer of tortillas, overlapping each other, followed by the remaining beef mixture. Drizzle the remaining enchilada sauce over the beef, then top with an even layer of shredded cheese.
8.Garnish your casserole with sliced black olives, red, yellow, green pepper curls.
9.Bake the casserole for 30-35 minutes or until cooked through and the cheese is melted and bubbly.
