1 cup self-rising flour

230 g rhubarb
115 g dates , weight after stoned and chopped
1 teaspoon cinnamon ( optional )
1 large egg
4 tablespoons milk

Instructions

1.Preheat the oven to 180°C/160°C fan/gas mark 4.
2.Lightly grease and line a 20cm/8in cake tin.
3.In a large bowl, cream together the butter and sugar until light and fluffy.
4.Gradually beat in the egg, then add the flour and cinnamon (if using) and fold in gently.
5.Stir in the rhubarb and dates, mixing well. Add the milk to loosen the mixture slightly.
6.Spoon the mixture into the prepared tin and smooth the surface.
7.Bake in the preheated oven for 45-50 minutes or until a skewer inserted into the centre comes out clean. Allow to cool slightly in the tin before turning out onto a wire rack to cool completely.
