Ingredients

1 cup olive oil
1/4 cup unsalted light butter
6 large cloves garlic , thinly sliced
5 yellow onions , sliced 1/4-inch thick
1 cup red cooking wine
15 Italian plum tomatoes , coarsely chopped
20 leaves fresh basil
5 tablespoons double concentrated tomato paste
1 tablespoon smoked paprika
1 tablespoon white sugar ( optional )
2 teaspoons cayenne pepper
2 teaspoons salt , or to taste
Patrick's Arrabiata Sauce is a spicy and flavorful pasta sauce that originated in central Italy. This sauce gets its heat from the addition of cayenne pepper, which gives it a nice kick. Arrabiata actually means 'angry' in Italian, which is fitting given the spicy nature of this sauce. Traditionally served with penne pasta, this sauce can also be used in a variety of other dishes, such as on pizza or as a dipping sauce for bread. Instructions

1.In a large pot, heat the olive oil and butter over medium heat until the butter has melted.
2.Add the sliced garlic and cook for 1-2 minutes, stirring occasionally.
3.Add the sliced onions and cook until they are translucent, about 5 minutes.
4.Pour in the red cooking wine and stir well.
5.Add the coarsely chopped tomatoes and cook for 10-15 minutes, stirring occasionally.
6.Add the fresh basil, double concentrated tomato paste, smoked paprika, white sugar (if using), cayenne pepper, and salt. Stir well to combine.
7.Reduce the heat to low and simmer the sauce for 45 minutes to 1 hour, stirring occasionally, until the consistency has thickened to your liking.
