Ingredients

500 g chicken
2 potatoes , cut into 4 pieces
1 kg basmati rice , soaked for 1 hour
4 onions , sliced
1 teaspoon dhaniya powder ( coriander )
1 teaspoon cumin powder
1 teaspoon chili powder
2 tablespoons ginger paste
2 tablespoons garlic paste
4 -5 tomatoes , pureed
100 g yogurt
4 cloves
1 big cinnamon stick
2 bay leaves
4 cardamom pods
8 black bell peppers ( kali mirch )
1 teaspoon black cumin seeds ( shah zeera )
1 tablespoon lemon juice
1 tomatoes , sliced
2 tablespoons finely chopped coriander
2 tablespoons finely chopped mint leaves
salt
4 tablespoons oil or 4 tablespoons dadla ghee
2 pinches orange food coloring
Pathani Chicken Biryani is a popular rice dish originating in the Pathan region of Pakistan. This recipe is made using a combination of aromatic spices, tender chicken, and fluffy rice. The dish is loaded with the flavors of cumin, coriander, and cinnamon, making it a perfect example of Pakistani cuisine. Chicken Biryani is said to be created by Mughal emperors. The recipe of Biryani differs from region to region, and every household has its own unique style. The Biryani can be prepared with either chicken or mutton and is often served with raita, a yogurt-based salad.

Instructions

1.Wash and soak rice for an hour.
2.In a heavy-bottomed pan, heat oil and fry potatoes until crispy brown, remove from pan.
3.In the same pan, add onions and fry until golden brown.
4.Add ginger and garlic paste, stir well and add chicken.
5.Add in all the spices, except orange food coloring, lemon juice, and yogurt. Cook for 10 minutes.
6.Add tomato puree and cook for another 10 minutes.
7.In a big pot, boil 8 cups of water, and add soaked rice to boil until half cooked.
8.Drain the rice, and spread chicken over the rice.
9.Top the chicken with potatoes, chopped tomatoes, and sprinkle coriander and mint leaves over it.
10.Mix orange food coloring with 1 tablespoon of water and sprinkle it on top of the rice.
11.Cover with tight lids and cook on low heat for 20 minutes.
12.Add lemon juice and yogurt to the Biryani. Serve hot with raita and salad.
