Ingredients

8 ounces salmon fillets , skinned
2 1/2 cups fish stock
1/2 lemon , juice and zest of
2 lbs white fish fillets , skinned ( pike is traditional )
4 egg whites
2 cups heavy cream
2 tablespoons fresh dill , chopped
salt and pepper
dill , spring ( to garnish )

Instructions

1.Preheat oven to 350°F.
2.Poach salmon fillets in fish stock for 5 minutes until cooked.
3.Remove and strain, reserving the stock.
4.Fluff the salmon with a fork and mix in lemon juice and zest.
5.In a food processor, blend the poached salmon and white fish fillets until smooth.
6.Add egg whites, heavy cream, and chopped dill, blending until well combined.
7.Season with salt and pepper.
8.Pour the mixture into a greased baking dish and smooth the top.
9.Bake for 45 minutes or until the pate is set and lightly golden on top.
