8 ounces salmon fillets , skinned | |
2 1/2 cups fish stock | |
1/2 lemon , juice and zest of | |
2 lbs white fish fillets , skinned ( pike is traditional ) | |
4 egg whites | |
2 cups heavy cream | |
2 tablespoons fresh dill , chopped | |
salt and pepper | |
dill , spring ( to garnish ) |
1. | Preheat the oven to 350°F. |
2. | Cut the salmon fillet into small pieces and combine with fish stock, lemon juice, and zest. |
3. | In a food processor, pulse the fish fillets until smooth and transfer to a bowl. |
4. | In a separate bowl, whisk the egg whites until foamy and add to the fish mixture. |
5. | Fold in the heavy cream and fresh dill until fully combined. |
6. | Season with salt and pepper to taste. |
7. | Grease a metal baking dish and pour in the mixture. |
8. | Bake for 45-50 minutes, or until the Pate is set and golden brown on top. |
9. | Let cool and serve with fresh dill springs on top. |
