Ingredients

8 ounces salmon fillets , skinned
2 1/2 cups fish stock
1/2 lemon , juice and zest of
2 lbs white fish fillets , skinned ( pike is traditional )
4 egg whites
2 cups heavy cream
2 tablespoons fresh dill , chopped
salt and pepper
dill , spring ( to garnish )

Instructions

1.Preheat the oven to 350°F.
2.Poach the salmon fillets in fish stock with lemon juice and zest until cooked through.
3.Flake the poached salmon and blend in a food processor with the white fish fillets until smooth.
4.In a separate bowl, whisk the egg whites until stiff peaks form.
5.In another bowl, whisk the heavy cream until it thickens.
6.Gently fold the egg whites and heavy cream into the salmon mixture along with the chopped dill.
7.Season with salt and pepper.
8.Pour the mixture into a greased terrine mold lined with plastic wrap.
9.Bake for 45-50 minutes, or until the mousse is set.
10.Let cool, then refrigerate overnight.
11.Serve chilled, garnished with a sprig of dill.
