Ingredients

8 ounces salmon fillets , skinned
2 1/2 cups fish stock
1/2 lemon , juice and zest of
2 lbs white fish fillets , skinned ( pike is traditional )
4 egg whites
2 cups heavy cream
2 tablespoons fresh dill , chopped
salt and pepper
dill , spring ( to garnish )
Pate Iz Shchuki, also known as Baked Salmon Mousse, is a classic Russian appetizer that's perfect for special occasions or dinner parties. This light and airy mousse is made by combining flaky poached salmon with pureed white fish and cream to create a silky smooth texture. The addition of lemon juice and fresh dill provide a burst of flavor that will tantalize your taste buds. Instructions

1.Preheat the oven to 375°F.
2.Begin by poaching the salmon fillet in fish stock until cooked through - about 7 - 8 minutes.
3.Remove fish and reserve the cooking liquid.
4.Flake the poached salmon and mix in the lemon juice and zest.
5.Puree the white fish fillets in a food processor with the egg whites and heavy cream until completely smooth.
6.Add in the flaked salmon, reserved cooking liquid and chopped dill. Season with salt and pepper and mix well.
7.Pour mixture into a baking dish and place in a larger roasting pan.
8.Add approximately 1 inch of water to the roasting pan and place in the oven.
9.Bake for 40-50 minutes or until firm.
10.Serve chilled with slices of bread or crackers and garnish with fresh dill springs.
