5 basil leaves

Instructions

1.Preheat the oven to 375°F (190°C).
2.Spread half of the sliced onions on the bottom of a 9x13 inch baking dish.
3.Layer half of the sliced potatoes on top of the onions, overlapping slightly.
4.Layer half of the sliced tomatoes on top of the potatoes.
5.Drizzle 3 tablespoons of olive oil on top of the tomatoes, and sprinkle with half of the grated cheese.
6.Sprinkle with salt and pepper.
7.Repeat the layers with the remaining onions, potatoes, and tomatoes.
8.Drizzle 3 tablespoons of olive oil over the top layer, and sprinkle with the rest of the grated cheese.
9.Add salt and pepper to taste.
10.Sprinkle the basil leaves on top of the cheese.
11.Pour the water into the baking dish around the edges, to help the vegetables cook and prevent them from drying out.
12.Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 20-25 minutes, until the cheese is golden brown.
13.Let the dish cool for a few minutes before serving.
